So I found a wholesale supplier of wood, charcoal and all sorts of bits and bobs that help backyard grillers. I picked up 20kg of American Oak and 20 kg of Apple Wood along with 10kg of lump charcoal and a few cedar planks. I'm now conducting a burn test with a 14" log of oak. I lit it at 09:00 and it's now 15:46. It's held a temp of 295F throughout the burn. There's nothing else in the Kamado and this thing is still solid! I'll update you with the final ash test but I fear that won't be until tomorrow.
